Harvested to order
We work with each beekeeper to extract only what's ready. Your honey is bottled within days of extraction, never held in bulk storage or blended with other batches. What you receive is what the bees made that season.
Delivered to your door
Each jar ships in protective kraft packaging with a handwritten tasting note from the beekeeper. Your box arrives in the first week of every month, along with a profile of the varietal and the region it came from.

We visit every beekeeper we work with. These are not anonymous bulk suppliers. They are third-generation apiarists, former farmers who converted their land, and passionate naturalists who built apiaries in rainforest country specifically to produce one thing well.
Margaret Keown
Margaret's 60 hives are placed at the edge of temperate rainforest where the leatherwood tree flowers for a narrow six-week window each summer. The resulting honey is deeply floral with a spiced finish unlike anything else Australia produces.
Darren Liu
Darren manages apiaries across 800 hectares of Yellow Box woodland, one of the most threatened ecosystems in Australia. His honey is considered by many to be the finest in the country for raw eating, mellow and crystalline-bright with a long finish.
Ross Brindley
Ross's apiaries sit inside a working macadamia orchard in the ranges behind Noosa. The bees pollinate the trees while producing a honey with a soft buttery sweetness and a warm, almost caramel finish, completely unlike commercially available macadamia honey.

Subscribe to AccessDeep amber, crystallises slowly. A robust sweetness with woody undertones and a long, slightly tannic finish. Exceptional on aged cheddar. Beekeeper: Tom Daly.
Pale gold, stays liquid for months. A clean sweetness with a fresh eucalyptus note and hints of dried wildflower. Best used cold, straight from the jar. Beekeeper: Anna Pryce.

Raw honey is extracted from the comb at room temperature and bottled with minimal filtration, leaving natural enzymes, pollen, propolis and antioxidants intact. Filtered honey is heated and passed through fine filters to remove all particles, which extends shelf life and keeps the product clear, but removes much of what makes honey nutritionally distinctive. Most supermarket honey is filtered. None of ours is.
Properly stored, raw honey has an indefinite shelf life. Keep the lid tight and store away from direct sunlight or heat. Many of our varietals will granulate over time as they cool, this is entirely natural and a sign the honey is genuine. To return granulated honey to a pourable state, place the jar in warm water for 20 minutes. Do not microwave.
Currently we ship within Australia only. International shipment of raw honey faces strict biosecurity restrictions in most countries, and we've decided not to compromise our product with the heat treatment required to clear customs. We're watching developments in this area carefully and hope to ship to New Zealand and parts of Europe in 2027.
The whole point of the subscription is discovery, so we curate each month's selection. You will always know what's coming in your confirmation email 10 days before dispatch, and you can skip a month or swap if a particular varietal doesn't suit you. Apiary Box subscribers can also maintain a preference profile noting any flavours they'd like to see more or less of.
Several of our producers hold certified organic status, and we note this clearly in each beekeeper's profile and on the jar label. Organic certification for honey is rigorous in Australia and requires that hives be placed beyond flight distance of any conventional farming operation. Where producers are not certified, we visit their apiaries personally and assess the surrounding land use before listing their honey.
Log into your account and you'll find cancel and pause options under Subscription Settings. Cancellations made before the 20th of the month take effect before the next billing cycle. There are no fees, no phone calls required, and no guilt trips. We'd rather you cancel and come back when the timing's right than stay subscribed when it's not working for you.
